Coconut Milk & Chia Seed

About three months ago, I started working with a naturopath to get to the bottom of some health related problems I’ve been having for years. I’ve always considered myself a pretty healthy eater, but working with a pro has really opened my eyes to the mistakes I’ve been unknowingly making when it comes to food. One biggie is the concept of healthy fats & oils–things like coconut, avocado, grass fed meats (beef, duck, pork) and ghee. They all fall into the Paleo diet, which is what was recommended to me.

I happen to love coconut milk. I’d avoided it for years because of its high fat content. When I got the green light to eat it, I started making this mixture to keep on hand. Now, this is pretty rich. I only eat about 1/4 cup at a time, usually topped with berries and a little honey. You’ll need three things: a can of full fat coconut milk (I’ve tried it with the light, but it doesn’t thicken like the full fat will), 1/4 cup of chia seeds and a mason jar.

Simply pour the coconut milk into a mason jar, add 1/4 cup chia seeds, cover and shake. Put the jar in the fridge overnight and the mixture thickens to a tapioca like consistency. I’m trying to get the kids to enjoy this. Hasn’t worked yet. They aren’t big fans of a consistency like this. But I’ll keep trying!

  1. Sounds fantastic! I have everything on hand! I think I will mix this up tonight to enjoy tomorrow morning for breakfast! Do you find that it sustains you until lunch?

    • I’d be curious to hear what you think! I do find it pretty filling in the morning. I’ve been having a bit here and there to satisfy my sweet tooth as well 🙂
